Cowgirl Dip!

Cowgirl Dip:


One cup of cooked white rice

Half fresh red bell pepper chopped

Whole Roma tomato chopped

Half a can of black beans

Fresh sweet corn (one cob or half a can)

A whole avocado chopped

Third cup white onion chopped


Half tablespoon of white wine vinegar

Juice of a whole lime

Sprinkle of tajin

Fresh cilantro (or dried if you don’t have any)

A few shakes of Tabasco to taste

Sprinkle of salt and pepper to taste


I eat this with Trader Joe’s gluten free yellow corn tortilla chips, but any tortilla chips are good with it and you can even eat it without! This recipe is really fun and you can get adventurous by adding new things to it!
